Oxygen exposure leads to oxidation, breaking down the delicate oils that carry flavor compounds. Moisture can cause beans to become stale or even develop mold, while heat accelerates the degradation process. Light, particularly UV rays, can break down the molecular structure of flavor compounds.

Fresh roasted beans release carbon dioxide for several days after roasting, a process called degassing. This natural occurrence is why you might notice your coffee bag appears slightly inflated. The Science of Flavor Preservation
